Fragaria is an experimental beer brewed from 90% wheat malt that was aged on oak for about 6 months before being bottled on the the 29th of October, 2021.
Not a classic Dutch gerste, but an experimental beer brewed with a ton of wheat malt. This large amount of wheat creates a very dry beer with a fluffy mouthfeel, pretty hazy and very light in color.
For fermentation, I chose a reasonably clean wild cultivated yeast that creates an easy going, drinkable and refreshing wild ale with woody and citrusy characteristics.
